Vegan Sponge Cake with Applesauce

1 ½ cups flour
½ tsp. baking soda
1 tsp. baking powder
Pinch of salt
¾ cups High J Orchards applesauce (use your favorite flavor)
¼ cup oil
¾ cup sugar
1 tsp. vanilla extract
1 tbsp. apple cider vinegar, regular vinegar or lemon juice

Preheat oven to 350 degrees. Prepare 9 x 5 x 3 inch loaf pan or two smaller loaf pans.
Combine High J Orchards Chunky applesauce, oil and sugar in a large mixing bowl.
Whisk well so that the oil is incorporated evenly.
Add apple cider vinegar and vanilla extract.
Sieve together the dry ingredients – flour, baking soda, baking powder and salt – directly into the bowl with the wet ingredients.
Fold the dry ingredients into the wet ingredients, being careful not to over-mix. The batter should feel light.
Pour the batter into the prepared pan(s).
Bake for 35 to 45 min, until a toothpick inserted into the center comes out clean.
Remove the pan from the oven and allow to cool for 5 minutes.
Remove the cake from the pan and cool on a wire rack.
Once completely cooled, slice, serve and enjoy!
