Grandma Judy’s Apple Cake with Streusel Topping

We’ve taken Grandma Judy’s Apple Cake recipe and added the streusel topping, but it is absolutely delicious without it! See which way you prefer it!

Streusel Topping:

3 tbsp. rolled oats
4 tsp. granulated sugar
1 tbsp. packed light brown sugar
2 tbsp. unsalted butter, cut into 1/2-inch pieces, softened
2 tsp. cinnamon
1/2 cup chopped nuts

Apple Nut Cake:

2 cups peeled, cored and chopped apples
3/4 to 1 ½ cups sugar
2 cups flour
1 1/2 tsp. baking soda
2 tsp. cinnamon
1 tsp. salt
2 large eggs, beaten
1/2 cup High J Orchards Applesauce
¼ cup oil
1 cup chopped walnuts (optional)

Adjust oven rack to upper-middle position and preheat oven to 425 degrees. Prepare 5” x 9” loaf pan or four smaller loaf pans with oil and flour.

FOR THE STREUSEL:
Blend oats, sugars, butter, nuts and cinnamon in food processor until mixture resembles coarse sand, 7 to 8 pulses. Transfer to small bowl, and set aside.

FOR THE CAKE:

Place apples in a large bowl and sprinkle with the sugar. Let stand for 15-20 minutes.
Mix together flour, baking soda, salt and cinnamon together in a bowl.
Add flour mixture to the apples.
Add eggs, oil, vanilla and nuts, and mix thoroughly.
Pour mixture into prepared pan(s).

Bake the 5” x 9” pan for one hour or the four mini-loaf pans for 45 minutes.
It is done when a toothpick inserted into the center comes out clean.

TO TOP THE CAKE:

Finally, top with the streusel mixture. If you want to make sure it sticks to the top, we recommend mixing a little water with powdered sugar, and brushing this on top and then laying on the streusel mixture.
